AI for in-house and home coffee roasting.
The frontier of automated coffee roasting.
Aden is a series of models trained to roast coffee. You provide the hands; Aden provides the knowledge.
Most of specialty coffee's value is added after export. Roasters paid $3.64 to $5.68 a pound for green coffee;1 a café buying it roasted pays a median $12.85,2 and a coffee drinker $35.10.3 Of surveyed businesses that roast their own, 93% sell it under their own brand, and 72% added revenue.4 Some roasters now need no venting at all,4 but a roaster still takes a year or more to train.5 Websites once took a developer; now 41% of new small-business sites are made with DIY builders.6 Aden does that for roasting: stay in control of every detail, or learn as you go with a safety net.

Coffee roasting is a niche the AI labs neglect: their attention is on coding, health, legal and business. So Nizami Coffee built two benchmarks from Roast Harness's real work, and on them, proprietary models carry over to roasting better than open-source ones.

Guji Dimtu G1 Natural. Heirloom from 2,150 m at Dimtu Wate Station, West Guji, Ethiopia, dried in the cherry; cupped 86.75 for lavender, grape and peach. Green, $4.63/lb; roasted, $19–26 a 12 oz bag.
The task: given its origin, not its cup notes: “Roast this coffee as you think best.”
Every roastEach roasted darker than it said it would. Aden-1 “bright” → Medium-dark · Opus light-medium → Dark · Luna light-medium → Medium-dark · DeepSeek medium-light → Medium-dark · Qwen light-medium → Medium. RoR eased from its peak to the drop with no stall, crash or flick, Rao's first rule (“control and smooth your RORs”). Kornman argues a steady decline suits some coffees and styles, not all. Each dropped inside the 8–12 min the SCA's cupping protocol sets for a sample roast. Aden-1 11:00 · Opus 10:30 · Luna 9:30 · DeepSeek 10:45 · Qwen 11:30.

Describe the cup for your menu. Aden writes the roast for your roaster, simulates the curve and estimates the cup before anyone spends a bean.
A profile for each drink on your menu, a light filter and an espresso, each a press of play for whoever roasts.
Hours are our estimate, for a café roasting 40 lb a week. Screens from the Roast Harness desktop app with a demo library; curves are from its fitted Bullet R1 simulator, not a real roaster, and the cup is an estimate, not a cupping.

Aden has mastered the underlying physics of roasting and can use any roaster, even ones yet to be released. Many industrial and modern small-scale roasters can be run by software, and on those Roast Harness runs the whole roast, so you never touch a dial. Check yours in the finder below.
Aden roasts to a professional standard from the first batch. Load the beans, stay with the machine and clean it when it's done.
See what a green coffee can taste like before you buy it, so you buy only what you need and roast it to its best.
Import roasts from other machines, adapt them to new hardware or keep several roasters roasting alike.
70 supported roasters from 36 makers. Search by maker or model to check yours.
